Craft Chocolate Making Process

DownLow Chocolate bars are made in small batches from bean-to-bar at our commercial kitchen in Camas, WA USA. We use the following equipment to:

  1. Sort raw cacao beans
  2. Roast cacao beans
  3. Crack & Winnow cacao beans into cacao nibs
  4. Refine & Melange cacao nibs and other ingredients into chocolate
  5. Temper chocolate (so that bars are shiny and snappy)
  6. Seed chocolate (so that it tempers easily)
  7. Mold chocolate into bars
