Craft Chocolate Making Process
DownLow Chocolate bars are made in small batches from bean-to-bar at our commercial kitchen in Camas, WA USA. We use the following equipment to:
- Sort raw cacao beans
- Roast cacao beans
- Crack & Winnow cacao beans into cacao nibs
- Refine & Melange cacao nibs and other ingredients into chocolate
- Temper chocolate (so that bars are shiny and snappy)
- Seed chocolate (so that it tempers easily)
- Mold chocolate into bars
